Soak the Wood PlankSoak a plank in water for 2 hours. |

Prepare the Plank for GrillingHeat your grill to high (550°F) and close the lid. Wait at least 15 minutes before continuing. |

Using tongs or a heat-proof grill glove, place your soaked plank on the grill for 2 minutes, then turn the board over and grill for another 2 minutes. Repeat, so that you will have grilled each side for a total of 4 minutes. You will hear the wood snap. The snapping sounds will continue throughout the grilling process. Leave the plank on the grill while you season your fish. |

Season and Grill the FishDrizzle olive oil on both sides of the fish and then season each side with salt and pepper. Place the fish directly on the wood plank and close the grill lid. |

After a few minutes you should begin to see smoke come out the sides of the grill. Cook for 15 minutes, or until the fish is cooked through. If the fillets are less than 1 inch thick, begin checking for doneness after 12 minutes. You know it is ready when the flesh begins to flake and separate, and when a metal skewer inserted into the flesh feels warm to the touch when removed. |
