Bring a large pan of water to a boil. Rinse the lentils, then cook for 20 minutes, or until tender. Drain and rinse, then put to one side. |

Meanwhile, steam or boil the potatoes until they are soft right through. Drain and halve. |

Trim the base from the scallions and cut them in long strips. |

Put the lentils, potatoes, and scallions into a serving dish and toss with the olive oil and vinegar. Season with plenty of black pepper and a little salt if required. |
