⅜ cup puy Lentils
1 lb/450 g new Potatoes
6 Scallions
1 tbsp Olive Oil
2 tbsp Balsamic vinegar
Salt
Black Pepper

Bring a large pan of water to a boil. Rinse the lentils, then cook for 20 minutes, or until tender. Drain and rinse, then put to one side.

Meanwhile, steam or boil the potatoes until they are soft right through. Drain and halve.

Trim the base from the scallions and cut them in long strips.

Put the lentils, potatoes, and scallions into a serving dish and toss with the olive oil and vinegar. Season with plenty of black pepper and a little salt if required.
