Place the apples in a bowl with the lemon juice and 1 tablespoon of mayonnaise. Leave for 40 minutes. |

Using a sharp knife, slice the celery very thinly. Add the celery, shallots, garlic, and walnuts to the apple and mix together. Stir in the mayonnaise and blend thoroughly. |

Add the cooked chicken to the bowl and mix well. |

Line a serving dish with the lettuce. Pile the chicken salad into a serving bowl, sprinkle with pepper and garnish with the chopped walnuts. |
