Preheat the oven to 375F. |

Pour the eggs into small sized bowl. Add oregano and garlic. Mix by whisking. |

Portion out the veggies in 6-large muffin cups. Begin with cauliflower. |

Pour the egg mixture to cover the cups. They should be about ¾ full. 5. Bake at 375F for 18-20 minutes and serve while warm or chilled. |
