Directions
At one of the very first Chicago Food Swap events, my daughter, Zoe, who was eight years old at the time, insisted that I swap for an enormous bottle of vanilla syrup. I could not imagine what she was planning to use it for. By the time Zoe was 11, she was regularly ordering vanilla soy lattes at the local coffee house, so clearly her interest in that vanilla syrup was prescient.
Vanilla syrup is divine in coffee drinks, but it is equally wonderful mixed with sparkling water for a homemade cream soda. We also like to pour it on pancakes and waffles, which was how we used up that first bottle of vanilla syrup. And as with all drink syrups, vanilla syrup comes in handy for your home bar.

Combine the water, sugar, and vanilla beans in a medium saucepan and bring to a boil over high heat. Stir to dissolve the sugar. |

Boil the syrup hard for 2 minutes, then remove from the heat and allow the vanilla beans to steep for 30 minutes. |

Pour in the vanilla extract and stir to combine. |
