1 chopped Red Pepper

1 cup sliced Chorizo Sausage

Directions
This is a very filling and tasty luncheon meal, similar to a quiche. Spanish purists would insist this dish should only have potatoes, onions, and eggs. Try it that way, but we like the additional flavors.

Preheat the oven to 350 degrees. |

Use an ovenproof skillet to heat the olive oil. |

Fry the potatoes on low for 10 minutes while flipping them occasionally. |

Season them with salt, pepper, and paprika. |

Add the onion, red peppers and chorizo and cook for another 10 minutes. |

Remove the skillet from the heat and let sit for 5 minutes to cool. |

Pour the beaten eggs over the potato mixture. |

Place the skillet in the oven and then bake for 15 minutes. The dish should be puffy. |
