2 tbsp Olive Oil
2 peeled and sliced Potatoes
1 sliced Onion
1 chopped Red Pepper
1 cup sliced Chorizo Sausage
Dash of Paprika
Salt
Black Pepper to taste
6 beaten Egg
1 tbsp chopped Chives

This is a very filling and tasty luncheon meal, similar to a quiche. Spanish purists would insist this dish should only have potatoes, onions, and eggs. Try it that way, but we like the additional flavors.

Preheat the oven to 350 degrees.

Use an ovenproof skillet to heat the olive oil.

Fry the potatoes on low for 10 minutes while flipping them occasionally.

Season them with salt, pepper, and paprika.

Add the onion, red peppers and chorizo and cook for another 10 minutes.

Remove the skillet from the heat and let sit for 5 minutes to cool.

Pour the beaten eggs over the potato mixture.

Place the skillet in the oven and then bake for 15 minutes. The dish should be puffy.
