Ingredients

12 oz (350 g) silken Tofu

1 small grated Lemon Juice

A few drops o Lemon Extract

1 tbsp powdered coconut Palm Sugar

Shredded or flaked Lemon Zest
Directions
Silken tofu blends so well and makes a delicious, creamy and smooth high-protein dessert. Keep a packet in the cupboard for when you need to whip up a quick dessert. Once opened, it will stay fresh for up to five days in the fridge.

Put the tofu in a blender and blitz until creamy and smooth. Add the lemon zest and juice, lemon extract and coconut palm sugar and blitz briefly to combine. |

Spoon the mixture into 4 small pots or ramekins and chill in the fridge for at least 1 hour. |

To serve, decorate with grated coconut or lemon zest and chopped pistachios. |
