Ingredients

Adjust Servings:
1 tablespoon Olive Oil
1 medium White Onions , diced
3 cloves Garlic , minced
1 large green Bell Peppers , sliced
1 large red Bell Peppers , sliced thin
1 large yellow Bell Peppers , sliced thin
½ cup Water
3 plum Tomatoes , chopped
1½ cups Shiitake Mushrooms , sliced
2 cups Tempeh , cut into chunks
3 tablespoons fresh Parsley , chopped
2 tablespoons fresh Basil , chopped
1 tablespoon fresh Oregano , chopped
1 tablespoon fresh Thyme
1 Bay Leaf
Sea Salt to taste
½ teaspoon Black Pepper
1 package Spaghetti , cooked
A few Basil leaves, for garnish

Heat the oil in a skillet over medium heat and sauté onion, garlic, and peppers until onion is translucent.

Add the water, tomatoes, mushrooms, tempeh, parsley, basil, oregano, thyme, bay leaf, salt, and pepper and simmer for 20 minutes.

Serve over cooked spaghetti. Garnish with basil leaves.
