Directions
On the sweet tea spectrum, this version sits far to the not-as-sweet side. Feel free to add more honey and adjust it to your liking. A touch of baking soda added to tea helps counteract the tea’s natural tannins, making for a smoother taste.

In a medium saucepan, bring 3 cups (720 ml) water to a boil. Remove the pan from the heat and add the baking soda. Add the tea bags and allow them to steep for 5 minutes. |

Remove the tea bags, stir in the honey, and allow the tea to cool enough to pour into a serving pitcher. Stir in 7 cups (1.7 L) cold water. Taste and adjust the honey if you’d like the tea to be sweeter. Add the mint, if desired. |
