Bring coconut milk & maple syrup to a boil in a large saucepan; add salt, cook for 5 minutes. |

Add rice, stir, and reduce heat to simmer. Cover and check after 20 minutes. |

Remove from heat when all liquid has been absorbed. |

Sprinkle each papaya half with lemon juice and sunflower seeds. Top with rice mixture. |
