Prepare the black beans. Preheat the oven to 400°F / 200°C. |

Cut the sweet potato into ¼-inch cubes and put these in a medium-sized bowl. Add the onions, 1 tablespoon of olive oil, and salt to taste. |

Toss the ingredients until the sweet potatoes and onions are completely coated. |

Transfer the ingredients to a baking sheet lined with parchment paper and spread them out in a single layer. |

Put the baking sheet in the oven and roast until the sweet potatoes are starting to turn brown and crispy, around 40 minutes. |

Meanwhile, combine the remaining olive oil, lime juice, garlic, chili powder, and cayenne thoroughly in a large bowl, until no lumps remain. |

Remove the sweet potatoes and onions from the oven and transfer them to the large bowl. |

Add the cooked black beans, parsley, and a pinch of salt. |
