Ingredients

1 tablespoon Olive Oil
1 Yellow Onion , diced
2 cloves Garlic , minced
2 cups Water
1 cup Navy Beans , cooked
½ Butternut Squash , peeled and cubed
1 teaspoon dry Mustard
¼ cup Raisins
1 tablespoon fresh Thyme , chopped
Sea Salt to taste
½ teaspoon freshly ground Black Pepper
¼ teaspoon Cayenne Pepper
1 cup Basmati Rice , cooked
1 tablespoon Chia Seeds , for garnish
½ cup Chives , for garnish

Heat the oil in a large saucepan over medium heat and sauté the onion and garlic until the onion is translucent.

Add water, navy beans, butternut squash, mustard, raisins, thyme, salt, pepper, and cayenne and simmer for about 20 minutes, or until squash is tender.

Add the rice and stir until heated. Garnish with chia seeds and chives.
