Directions
Biff à la Lindström is named after a prominent Swedish industrialist. The addition of beetroot and capers to a regular burger soon became a huge hit. Try it for yourself and discover just why.

In a bowl, combine the beef with the onion, egg yolks, capers, beetroot, beetroot juice, salt, pepper, and chives. |

Mix until evenly combined while making sure not to over-mix which can cause the meat to become overly dense and tough. |

Divide the mixture into 4 evenly sized patties of approximately ½” thick. |

Set the burgers aside to rest at room temperature for 60 minutes. |

Place 2 frying pans over moderate-high heat. |

Add 1 tbsp of oil to each of the frying pans. |

When hot, add a burger to each pan and fry for 3-4 minutes, on each side, until cooked through but slightly pink in the middle. |

Remove from the pans and serve topped with a fried egg. |
