Whisk eggs in large bowl until frothy. Add in cornflour, salt and pepper. Mix well and keep aside. |

Combine cheese, spring onion, cajun spice and salt in a bowl. Mix well and keep aside. |

Heat olive oil in a deep bottom pan over medium-high flame. Make a pocket in each fillet by slitting them vertically. Stuff each fillet with prepared onion and cheese mix. Then, evenly coat them with prepared egg mix and put them in the pan with hot. Cook both sides of each fillet until golden-brown and crisp. |

Once done, remove the pan from heat and transfer the fillets to a serving platter. Serve hot with mayo and ketchup. |
