Whisk together sugar, baking powder, flour, and salt in a medium bowl. Whisk together milk, egg substitute, and oil in a small bowl. Combine milk and flour mixture, stirring just until flour mixture is moistened. |

Generously spray a griddle with nonstick spray and set over medium heat. Pour a scant ¼ cupful of batter onto the griddle. |

Cook until bubbles appear and edges of the pancake look dry, about 3 minutes. |

Turn pancake over and cook for about 3 minutes longer. Transfer to a platter and keep warm. Repeat with remaining batter, making a total of 24 pancakes. If the griddle is large enough more than one pancake may be made at a time. |
