Place the strawberries in a bowl. Add the sparkling wine. Cover with plastic wrap and let stand for 30 minutes. Whip the whipping cream until soft peaks form. |

Flavor with honey, then beat until stiff peaks form. Spoon the strawberries into serving glasses (champagne flutes are ideal). Top with whipped cream and garnish with mint sprigs. |
