1 tablespoon Rice Wine

Season the shrimp or lobster with the cornstarch mixture, egg white, ½ teaspoon sugar, and ¼ teaspoon salt. Massage the shrimp or lobster gently, mixing well. Set aside. |

Heat 1 tablespoon of oil in a wok until very hot, then add the snow peas, ¼ teaspoon salt, and a pinch of sugar. Stir-fry for 1 minute, then remove from the heat and set aside. |

Heat the remaining oil in a wok until very hot, then stir-fry the shrimp or lobster for 1 minute. Add the garlic and ginger, stirring to mix thoroughly. Add the soy sauce, rice wine, Chicken Stock, chili bean paste, and tomato ketchup. Continue to stir-fry until the shrimp or lobster is cooked, then serve. |
