Ingredients

1½ lbs (750 g) fresh large Shrimp , peeled and deveined
8 oz (250 g) fresh Lobster meat
1 teaspoon Cornstarch , blended
¼ cup (60 ml) Water
1 Egg White
½ teaspoon plus a pinch of Sugar
½ teaspoon Salt
2 tablespoons Oil
¾ cup (50 g) Snow Peas , sliced
4 cloves Garlic , minced
½ tablespoon grated Ginger
½ tablespoon Soy Sauce
1 tablespoon Rice Wine or sake
1 tablespoon Basic Chicken broth
½ tablespoon Chili Bean Paste
2 tablespoons tomato Ketchup

This easy stir-fry can also be made with fresh lobster meat for a wonderful indulgence.

Steps

Season the shrimp or lobster with the cornstarch mixture, egg white, ½ teaspoon sugar, and ¼ teaspoon salt. Massage the shrimp or lobster gently, mixing well. Set aside.

Heat 1 tablespoon of oil in a wok until very hot, then add the snow peas, ¼ teaspoon salt, and a pinch of sugar. Stir-fry for 1 minute, then remove from the heat and set aside.

Heat the remaining oil in a wok until very hot, then stir-fry the shrimp or lobster for 1 minute. Add the garlic and ginger, stirring to mix thoroughly. Add the soy sauce, rice wine, Chicken Stock, chili bean paste, and tomato ketchup. Continue to stir-fry until the shrimp or lobster is cooked, then serve.
