Preheat oven to 450 degrees F. |

Lay slices of bacon out on an unheated broiler pan. Sprinkle each with brown sugar and place into the oven. |

Cook for 10 minutes or until crispy. When cooled, chop into bits and set aside. |

To prepare the patties; divide the meat into 8 balls. Press down until you have a round disk, roughly ¾” high x 4”. Set four of them aside. |

Divide the bacon bits and cheese into 4 even portions and place each one to its burger. Ensure there is no bacon or cheese escaping the perimeter of the ½” rim around each patty. |

Cover the top with the other four patties and pinch the edges to close. Refrigerate for roughly 1 hour to get firm. |

Season with salt and pepper when removed from refrigerator. |

If using charcoal: oil a rack, lay patties and cook over med–hot coals for 10 minutes. Carefully turn and grill for 10 minutes (160°F). Around the last minute, thereabout, toast the cut faces of the buns. |

If you are using gas; Put the grill on full blast to heat the space and then set to medium-hot. Oil a rack, lay patties and cover. |

Place the burger on a bun. Top with tomatoes, onion, lettuce and any other sauces you desire. |
