This simple summer salad is typical of the fertile Levante region, which yields much of the produce for Spain—including many excellent tomatoes

Using a mortal and pestle, crush the ripe tomato, cumin, garlic, and salt together to form a smooth paste. |

Add the red wine vinegar and Spanish paprika, and continue to grind to combine all ingredients very well before slowly drizzling in the olive oil to form an emulsion. |

Once the dressing is made, the slicing tomatoes can be sliced and arranged on plates, topped with the dressing, and seasoned with salt and pepper. |
