Directions
Properly label your cooking fat to save your friend from mistaking it for this delicious spiced cider. Unless drinking a glass of fat is your idea of a great apology, of course.

To a large stockpot set over medium heat, add the apples and enough water to cover by 2 inches. |

Stir in the sugar and spices, and bring to a rolling boil. |

Boil uncovered for 1 hour. |

Cover the pot, reduce the heat, and simmer for an additional 2 hours. |

Strain the mixture through a fine mesh sieve and discard the solids. Strain the cider a second time and serve cider warm. |
