9 oz (250 g) fresh Watercress

3 oz (75 g) fresh Bean Sprouts

leaves from several sprigs fresh flat-leaf Parsley

1 ripe, soft Avocado

2 tbsp Lemon Juice

1 tbsp Tarragon Vinegar

3 oz (75 g) thick plain Yogurt

1 small Garlic

1 tbsp chopped fresh Tarragon

To make the dressing, put the avocado, lemon juice, and vinegar in a blender or food processor and blend until smooth, scraping down the side with a rubber spatula. Add the yogurt, garlic, and tarragon leaves and process again. Season with salt and pepper to taste, then transfer to a bowl. Cover closely with plastic wrap and chill for 2 hours. |

To assemble the salad, divide the tomato slices among 4–6 individual plates. Toss the smoked chicken, watercress, bean sprouts and parsley or cilantro leaves together. Divide the salad ingredients among the plates. |

Adjust the seasoning in the dressing, if necessary. Spoon the dressing over each salad and serve. |
