1½ lbs of Chicken breast, diced
¾ cup of Onion , chopped
1¼ cups of Celery , chopped
1¾ cups of chopped Apples , Granny Smith
Preferred
1 cup of Chicken broth
¼ cup of Milk , non-fat
1 tbsp of Curry Powder
¼ tsp of Paprika
1/3 cup of Quinoa

This curry recipe has lots of potential for change, so you can tweak some of the ingredients, if you like. Some people add more curry powder, so if you like hot food, that’s an option. An extra splash of soy sauce adds to the flavor, too.

Place chicken, paprika, curry powder, milk, broth, apples, celery and onions in slow cooker. Mix well by stirring.

Cover slow cooker. Cook on the Low setting for four to five hours.

In last ½ hour of cooking, stir quinoa in. Cook till tender. Serve.
