64 ounces skinless and boneless Chicken thighs
Kosher Salt
28 ounces canned whole Tomatoes
1 roughly chopped medium Yellow Onion
2 stemmed dried Ancho Chiles
1 large Chipotle Chile in adobo sauce
4 ounces sliced toasted Almonds
2 ounces Raisins
4 ounces finely chopped Bittersweet Chocolate
3 peeled Garlic cloves, smashed
1½ ounces extra-virgin Olive Oil
¾ teaspoon Cumin , ground
½ teaspoon Cinnamon , ground
Fresh Cilantro leaves

The slow cooker is a convenient way to make rich and delicious mole sauce. Just drop all the Ingredients into the cooker and in 8 hours you will have a mouth-watering sauce.

In a 190-ounce slow cooker, season chicken with coarse salt.

Combine the rest of the Ingredients except for cilantro in a food processor and puree until smooth.

Pour mixture from the food processor over the chicken in the slow cooker and cook on low for 8 hours. Top chicken with cilantro before serving.
