1 small green Bell Peppers

(Optional) ½ small Onion

1 x 25 mm (1”) clump of fresh Ginger

1 tbsp dried Oregano

¼ tsp Red Pepper Flakes

Directions
This mouth-wateringly tasty traditional lightly seasoned slow cooked pork chop meal is cooked in a rich, thick tomato sauce for a delicious dinner any time of the year. Great to impress friends and family!

Heat olive oil in a large frying pan sauté and over medium-high heat. |

Season pork chops with ½ tsp salt and ¼ tsp black pepper. Sear the pork chops in shallow frying pan for 3 minutes each side, to form a light crust. Now put the pork chops into a casserole dish. Pre-heat the oven at 140C (275F). |

Add the remaining ingredients to the casserole dish, stir gently to combine. |

Cover and cook on low for 2 – 2½ hours, until pork chops are tender and cooked through. |

Serve over spaghetti or fettuccine noodles with sauce spooned on top, sprinkled with Parmesan cheese and garnish with fresh parsley. |
