Directions
Vinaigrette is the simplest of the salad dressings, and a basic from which you can create a variety of flavors. The standard formula for vinaigrette is 3 parts oil to 1 part vinegar (or acid), but this is a rule that’s meant to be broken. Feel free to vary the ratios, to substitute different oils or acids, and to modify the type and amount of sweetener used (or leave it out completely). Over time you will learn to make salad dressing without a measuring cup, simply by eyeballing the amounts as you pour them into the jar to shake.

Combine all of the ingredients in a jar, cover, and shake them together. Alternatively, a whisk, a blender, food processor, or immersion blender can be used to combine the ingredients. |

Refrigerate for up to 6 months. Shake to recombine the ingredients before each use. |
