Preheat the oven to 400°F (200°C). Prepare a muffin tin with liners or oil. In a mixing bowl, combine the okra flour, all-purpose flour, cornmeal, salt, baking powder, baking soda, and red pepper flakes. Then add the shredded cheese and toss. Combine the buttermilk, egg, and oil in another small dish and whisk. Add the wet ingredients into the dry ingredients, stirring until everything is just combined, being careful not to overmix. |

Divide the batter equally among the muffin cups. Bake for about 20 minutes. The muffins will be golden with dark flecks. Insert a toothpick into a muffin to determine whether they’re fully baked—the toothpick will come out clean when the muffins are done. Cool on a rack if you like, or eat them warm out of the oven. |
