Melt the butter in a skillet. |

Season the salmon fillets with salt. |

Sear the salmon on both sides and be sure to get the skin nice and crispy. |

Set the salmon aside but keep warm. |

Using a double boiler, bring 1 cup of water to boil in the bottom part. |

Whisk the eggs in the top bowl for 3 minutes. |

Keep adding pieces of butter to the eggs and keep whisking. |

Remove the top bowl from the heat and stir in the lemon juice and season with salt and pepper. |
