Ingredients

Adjust Servings:
185 ml Garlic Mayonnaise
½ Lemon Juice (about 1 tablespoon)
2 tablespoons Olive Oil
1 teaspoon Apple Cider Vinegar
¼ teaspoon Sea Salt
425 g BPA-free tinned Salmon , drained
½ Cucumber , finely chopped
10 Kalamata Olives , pitted and finely chopped
4 Radishes , minced (and an extra one finely sliced for garnish, if you like)
3 tablespoons minced Red Onion
2 tablespoons minced flat-leaf Parsley

Soften the mayo in a warm water bath until it is liquid.

Combine the mayo, lemon juice, olive oil, vinegar and salt in a large bowl.

Add the salmon, cucumber, olives, radishes, red onion and parsley and mix to combine.

Serve on a bed of mixed greens or in lettuce cups (whole lettuce leaves) with some slices of radish on top, if you like.
