Soften the mayo in a warm water bath until it is liquid. |

Combine the mayo, lemon juice, olive oil, vinegar and salt in a large bowl. |

Add the salmon, cucumber, olives, radishes, red onion and parsley and mix to combine. |

Serve on a bed of mixed greens or in lettuce cups (whole lettuce leaves) with some slices of radish on top, if you like. |
