Toss the squash with salt in a colander.Place aside for 30 minutes. |

After 30 minutes, transfer the squash to a large microwave safe plate so that it all lays flat in one layer.Add the onion, pimento, and olive oil. |

Cook in the microwave on high for 4–6 minutes. |
