Directions
Fruit crumbles are a common dessert in Ireland and are particularly good at the height of the fruit’s season. This style can be made with many other fruits substituted for the rhubarb.

For the Rhubarb FillingCombine the rhubarb and sugar in a mixing bowl, and mix well to combine. |

Rub the inside of two 9-inch pie pans with the butter to coat the walls and bottom (other suitable baking dishes can be used as well). |

Pour the rhubarb mixture into the pie pans. |

For the Crumble ToppingIn a mixing bowl, add the flour and butter; cut in the butter until it resembles peas throughout the flour. |

Stir the brown sugar and oats into the flour/butter mixture to combine. |

Sprinkle this mixture over the top of the rhubarb in the pie pans. |

Transfer to a 350 degree F oven, and bake until the top turns a golden color; remove. |
