1 lb 2 oz (500 g) red Cabbage

1 small Red Onion

5 tablespoons Olive Oil

3 tablespoons White Wine Vinegar

1 tablespoon Balsamic vinegar

1 freshly squeezed Orange Juice

1 tablespoon Granulated Sugar

1 teaspoon Dijon Mustard

1 teaspoon Salt

2 ripe Conference Pear

1 cup (100 g) Walnuts

Finely slice the cabbage and red onion and place in a bowl. Mix together the remaining ingredients (apart from the pears and walnuts), then pour over the red cabbage and onion and toss. Set aside for a few hours to allow the flavours to mingle. This will also soften the cabbage and onion. |

Just before serving, core and finely slice the pears and toast the walnuts. Mix with the cabbage and serve. |
