1 package vegan peach or apricot Cookies

Place the tofu, maple syrup, vanilla extract, and almond extract in a food processor or blender and purée until smooth. |

Place the raspberry jam in a saucepan and melt over low heat, about 2 – 3 minutes. |

Line the bottom of individual dessert dishes with a layer of crushed vegan cookies. |

Cover cookies with half the melted raspberry jam, 1 tablespoon coconut, and a layer of puréed tofu. |

Repeat with another layer of cookies, jam, coconut, and tofu purée. Garnish with fresh raspberries. |
