Ingredients

Adjust Servings:
1 cup silken Tofu
¼ cup Maple Syrup , grade B
1 teaspoon Vanilla Extract
1 teaspoon Almond Extract
¾ cup Raspberry Jam
1 package vegan peach or apricot Cookies , crushed
2 tablespoons dried Coconut
½ cup Raspberries , for garnish

Place the tofu, maple syrup, vanilla extract, and almond extract in a food processor or blender and purée until smooth.

Place the raspberry jam in a saucepan and melt over low heat, about 2 – 3 minutes.

Line the bottom of individual dessert dishes with a layer of crushed vegan cookies.

Cover cookies with half the melted raspberry jam, 1 tablespoon coconut, and a layer of puréed tofu.

Repeat with another layer of cookies, jam, coconut, and tofu purée. Garnish with fresh raspberries.
