Ingredients

3 lb (1.35 kg) red skinned Potatoes

500 ml (pint) boiling Water

4 hard-boiled Egg

1 small Red Onion

1 stick of washed Celery

½ medium red Bell Peppers

1 cup (250 ml) jarred Bread

1 tbsp Dijon Mustard

1 tbsp Lemon Juice

½ cup (125 ml) light Mayonnaise
Directions
This mouth-wateringly tasty Southern Florida potato salad dish is a firm favourite as a side dish, with friends and family. It is so simple and quick to make, yet so delicious to eat.

Put the potatoes in boiling water for about 30 minutes or until tender, not too soft. Drain well. then cool on a cold baking tray to room temperature. |

Meanwhile, use a large mixing bowl to the combine eggs, (optional) onions, peppers, pickles, celery, lemon juice, mustard, mayonnaise and parsley. |

Put mixing bowl mix in your fridge until ready to prepare salad. |

While the potatoes are still slightly warm, combine them with mayonnaise (mix) dressing. |

Season with salt and pepper. You can prepare this the night before, but it must be at least 3 hours prior to serving and keep refrigerated until ready to eat. |
