Arrange one rack in the lower third of your oven and remove any other racks. Preheat the oven to 450°F. Lightly spray a muffin tin with oil. Pour ½ teaspoon of the melted butter into each cup of the muffin tin.

In a large bowl, whisk together the flour and salt.

In a separate large bowl, whisk together the remaining 1 tablespoon butter, the eggs, and milk until well combined and light in color, about 3 minutes. Whisking constantly, slowly pour the egg mixture into the flour mixture. Pour the batter into the prepared muffin tin, filling each cup halfway.

Bake for 10 minutes. Reduce the oven temperature to 325°F and bake until golden brown and puffed, 10 more minutes. Serve immediately.
