Arrange one rack in the lower third of your oven and remove any other racks. Preheat the oven to 450°F. Lightly spray a muffin tin with oil. Pour ½ teaspoon of the melted butter into each cup of the muffin tin. |

In a large bowl, whisk together the flour and salt. |

In a separate large bowl, whisk together the remaining 1 tablespoon butter, the eggs, and milk until well combined and light in color, about 3 minutes. Whisking constantly, slowly pour the egg mixture into the flour mixture. Pour the batter into the prepared muffin tin, filling each cup halfway. |
