Prepare the couscous according to the instructions on the packet. |

Finely chop the parsley, mint leaves and onion. Core and finely dice the tomatoes and cucumber. |

For the dressing, mix together the ingredients until smooth. |

Mix the couscous, herbs, onion, tomatoes, cucumber and chickpeas with the dressing, and sprinkle the salad with the pomegranate seeds. |
