Directions
Polenta is extremely versatile. If you’re eating it for breakfast, it’s no harder to make than oatmeal—and indeed, it provides an alternative for those who can’t tolerate oats. If you’d like to save some to chill and make Fried Polenta Sticks or Polenta Croutons, you will need to cook it longer and add a few more ingredients. The additional ingredients noted are based on a full batch; if you plan to eat some for breakfast and save some to make Croutons or Fried Polenta Sticks later, modify the amounts accordingly.

To make CerealBring 3 cups of water and salt to a boil in a medium saucepan over high heat. |

Turn the heat to low and stir in the cornmeal. Cook over low heat for 5 minutes, stirring occasionally. (Serve immediately with pure maple syrup and/or fresh fruit.) |
