Ingredients

4 Peach , peeled and halved
2 cups Apple Juice
1 Cinnamon stick
2 cups fresh or frozen Raspberries
¾ cup Maple Sugar
1 teaspoon Lemon Extract
¼ cup micro-greens or fresh Mint leaves, for garnish

Place the peaches, apple juice, and cinnamon stick in a large saucepan and simmer over medium heat for 5 minutes, covered. Drain and set aside.

In a separate saucepan, combine the raspberries, maple sugar, and lemon extract and simmer for 2 minutes until the sugar is dissolved.

Remove the raspberry mixture from the heat and purée in a blender until smooth.

Place the peaches in dessert dishes and cover with raspberry sauce. Garnish with the micro-greens or mint leaves.
