Place the peaches, apple juice, and cinnamon stick in a large saucepan and simmer over medium heat for 5 minutes, covered. Drain and set aside. |

In a separate saucepan, combine the raspberries, maple sugar, and lemon extract and simmer for 2 minutes until the sugar is dissolved. |

Remove the raspberry mixture from the heat and purée in a blender until smooth. |

Place the peaches in dessert dishes and cover with raspberry sauce. Garnish with the micro-greens or mint leaves. |
