In the Instant Pot, combine the rice and water. |

Secure the lid on the pot. Close the pressure-release valve. Select manual and set the pot at high pressure for 10 minutes. At the end of the cooking time, quick release the pressure. |

Stir in the sweetened condensed milk, half the coconut milk, the crushed pineapple and its juices, and the cinnamon. Stir to thoroughly combine. Taste and add more sweetened condensed milk, if desired. |

Allow the pudding to cool for a few minutes to finish absorbing all the liquid. Add some or all of the remaining coconut milk to thin the pudding to the desired consistency. |
