For PreparationCook the rice and drain well. You don’t want the rice to be too wet. Chop up 4 of the shrimp. |

Chop the onions and tomatoes, removing the tomato seeds, and put them together in a small bowl. |

Put all the dry ingredients, curry powder, white pepper, sugar and salt, together in a small bowl. Put all the wet ingredients together, the soy sauce and fish sauce. |

For CookingHeat a wok or large pan on a high heat and add 2 tablespoons of oil. |

Fry the whole shrimp completely and remove and set aside. Now, fry the cut up shrimp and set aside. |

Add more oil to the empty pan. Add the eggs and beak it up slightly. When half cooked, add the cooked rice to the top and mix together. Add the diced onions and mix. |

Add curry powder, white pepper, sugar, salt, soy sauce and fish sauce. Toss and mix until everything is well distributed. |

Add the cashews, pineapple, and small pieces of shrimp; cook and mix until the pineapples turn slightly darker. |

Turn off the heat and add in the tomatoes and green onions and mix. Serve with whole shrimps on top, extra green onions and cucumber slices. |
