8 medium Peach

¼ cup light Brown Sugar

For the Biscuit Topping

2 cups all-purpose Flour

½ cup Granulated Sugar

1½ teaspoons Baking Powder

¼ teaspoon Baking Soda

½ teaspoon Salt

½ cup (1 stick) Unsalted Butter

½ cup Buttermilk
-
Egg Wash
-
1 large Egg

Directions
Here’s a great peach cobbler for the warmer summer months, or perhaps when you are recovering from chicken pox; it’s delicious topped with ice cream. Hopefully this will be yummy enough to distract you from the scratching.

To make the Peach FillingPreheat the oven to 350°F. |

Grease a 9 × 13-inch baking dish with cooking spray. |

In a large bowl, stir together the peaches, brown sugar, cornstarch, lemon zest, lemon juice, vanilla extract, ground cinnamon, and salt to combine. |

Pour into the prepared baking dish, and bake for 7 minutes. Remove from the oven, but leave the heat on while preparing the biscuit topping. |

To make the Biscutt ToppingIn a large bowl, whisk the flour, sugar, baking powder, baking soda, and salt to combine. Toss in the cold, cubed butter and stir with a rubber spatula, just to coat the butter with the flour. Using either two knives, a pastry cutter, or your fingers, work the butter into the dry ingredients until the butter is pea sized (some larger pieces are fine). |

Stir in the buttermilk until it is incorporated. |

Place handfuls of dough on top of the filling until the peaches are mostly covered. |

To Complete the CobblerFor the egg wash, beat the egg with a splash of water. Brush the tops of the biscuits with the wash. Return the baking dish to the oven and bake for another 40 minutes, or until a toothpick inserted into the center of the biscuit topping comes out clean and free of crumbs. |

Let cool for 5 minutes before serving. (Try topping the cobbler with vanilla ice cream.) |
