This Alsatian dish is full of flavour and very filling. Enjoy it with a simple fresh green salad.

In a heavy pan, heat the lard or oil and sauté the onions until soft but not browned. Drain well on kitchen paper. |

Add the bacon to the pan and cook briskly for a couple of minutes, then drain off the fat. Next, mix the cream and the eggs and season well. Stir in the onions and the bacon and fill the pastry case. |

Preheat the oven to 220°C/425°F/gas mark 7 and bake for 10–15 minutes, turning the heat down to 190°C/375°F/gas mark 5 for a further 15 minutes, or until the filling is set. Serve warm. |
