Onion and Walnut Muffins

This wonderful recipe comes from chef Wally Malouf’s.

Steps

Preheat the oven to 220°C/425ºF/gas mark 7.

Purée the onion finely in a food processor. Measure the purée to achieve 250 g.

Beat together the butter, eggs and sugar and add the onion purée.

Stir in the remaining ingredients, one by one, and mix thoroughly.

Fill the muffin tins almost full. Bake them for 20 minutes, or until they are puffed and well browned. Serve warm.
