Preheat the oven to 220°C/425ºF/gas mark 7. |

Purée the onion finely in a food processor. Measure the purée to achieve 250 g. |

Beat together the butter, eggs and sugar and add the onion purée. |

Stir in the remaining ingredients, one by one, and mix thoroughly. |

Fill the muffin tins almost full. Bake them for 20 minutes, or until they are puffed and well browned. Serve warm. |
