6 tbsp unsweetened Applesauce

1⁄2 cup raw Sugar

1⁄4 cup pure Maple Syrup

1⁄2 slightly ripe Banana

2 tbsp non-dairy Milk

1⁄2 tsp Vanilla Extract

11⁄2 cup rolled Oats
-
1⁄2 cup whole- Wheat Flour
-
1⁄4 tsp Baking Soda

a few dashes of ground Cinnamon

¼ cup Raisins
Directions
Chewy and yet still soft right out of the oven, these oatmeal cookies are my all-time favorite.

Preheat oven to 350°F. |

Grease cookie sheet or line with parchment paper. |

Mix applesauce, sugar, maple syrup, banana, non-dairy milk, and vanilla in a medium bowl. |

In a large bowl, mix oats, flour, baking soda, and cinnamon. |

Pour wet mixture into dry mixture, add optional raisins, cranberries, or chips, and gently stir until just combined. If not using raisins, cranberries, or chips, add 1 to 2 extra tbsp of flour. |

Pick off bouncy ball sized pieces and place on sheet. Alternatively drop spoonfuls of batter onto the cookie sheet if the batter is too sticky or loose to mold into balls. |

Flatten with palm and leave at least a 1⁄2 inch between each cookie. |

Bake for 10 to 15 minutes, until springy to the touch or desired firmness is reached. |
