1 head Broccoli

2 cups prepared Brown Rice

1 medium Carrots

¼ teaspoon sweet Hungarian Paprika

¼ teaspoon Kosher Salt

For the Muffin Tin MeatloafPreheat the oven to 400°F. Remove the muffin pan from the fridge and remove the plastic wrap. |

In a small bowl, mix the tomato paste, Dijon, and honey. Baste the tops of the meatloaves with the mixture. |

Bake for about 15 minutes, until the meat mixture is firm but moist; the internal temperature should be 165°F. If using turkey, it will take an extra 7 minutes. |

For the Broccoli Forest RicePlace the broccoli in a 2-quart saucepan with ½ cup water. |

Cover and steam on medium heat for 3 to 4 minutes. Do not overcook. |

Remove from heat and strain. |

In the same saucepan, heat 2 cups of prepared rice with 1 Tablespoon water over medium heat until warmed through. |
