Press Sauté button at Normal setting. Once pot is hot, add olive oil, garlic, ginger, and mushrooms. Cook for 5–7 minutes, being sure to stir occasionally. |

Press Cancel and allow pot to cool for 5 minutes. |

Add all remaining ingredients to pot except the tofu. Press High Manual Pressure and cook for 5 minutes. Once done, QPR all pressure. Remove lid, and add in tofu. The tofu will heat up in no time, and then it’s ready to serve! |
