Ingredients

1 big Tomato cut in cubes
½ cup of fresh finely chopped Coriander
½ cup marinated fresh Corn seeds
1 cup marinated Mushrooms
2 tbsp finely chopped White Onions
1 tbsp finely chopped fresh Onion
1 minced Garlic clove
½ finely chopped Red Pepper
1 tbsp Lemon Juice
Ground Black Pepper
Salt
1-2 tbsp Olive Oil

Mexican salad to serve with tacos or as a filling for other recipes.

Put the mushrooms into a bowl. Marinate them with olive oil, salt, ground pepper and lemon for 1 hour.

Dehydrate for 40 minutes afterwards.

Marinate the corn seeds with salt, olive oil and vinegar for 1 hour.

Mix with the rest of the ingredients and serve.
