Brown the sausage, breaking it up with a spoon, in the oil in a skillet over medium-high heat, 5 to 7 minutes. Mix in the Asiago, pine nuts, tomatoes, and scallions. |

Hollow out the zucchini and fill with the sausage mixture. Roast at 400°F until tender, 12 to 15 minutes. |
