½ cup pure Maple Syrup

½ cup reduced-sodium Soy Sauce

1 Tablespoon grated fresh Ginger

¼ teaspoon Cayenne Pepper

1¼ pounds Salmon

¼ teaspoon Kosher Salt

¼ teaspoon Black Pepper

1 pound baby Bok Choy

2 cups prepared Brown Rice

Place a rack 5 inches from the heat and preheat the broiler. Line a baking sheet with aluminum foil and brush with the grapeseed oil. (This helps with cleanup!) |

Whisk the syrup, soy sauce, garlic, ginger, and cayenne together in a small saucepan. Bring to a simmer over medium heat and simmer for 5 to 7 minutes, until the sauce is as thick as syrup. Set aside to cool. |

Arrange the salmon on the broiler pan and season with the salt and pepper. Surround the fish with the bok choy and brush with olive oil. Place the pan under the broiler and broil for 5 minutes. |

Brush the salmon with a little of the glaze. Return the fish to the broiler for an additional 2 to 3 minutes. |

Remove the salmon from the broiler and transfer to a serving dish. Cover the fish with the remaining glaze and serve with the brown rice. |
