Preheat oven to 350°F. |

Heat a medium skillet over medium-high heat. Add bacon and cook until brown and crisp. Remove to a paper towel–lined plate using a slotted spoon, leaving the drippings in the pan, and remove the pan from the heat. Let the bacon cool and then transfer the crisp bacon to a food processor with the bread crumbs. Pulse until an even texture is achieved and set aside. |

Place the pan back over medium heat. You can choose to cook using the bacon drippings (which is what I do) or remove them and add olive oil to the pan. Add in the onion and pepper and cook for 3 to 5 minutes, until the onion is translucent. Add garlic and cook for 30 seconds or so, until fragrant. Remove from heat and cool in a bowl. |

In a medium saucepan over medium heat, melt butter to start your béchamel. Add flour all at once and whisk vigorously to avoid lumps. Cook for 2 to 3 minutes. You just want to remove the raw taste. Add milk, spices, hot sauce, and salt and continue to whisk to prevent lumps (remember to get the corners!). Once the mixture starts to bubble, reduce heat to low and cook for 5 to 6 minutes, whisking often. Remove from heat. |

Temper the eggs with the béchamel ladle a bit of béchamel into the beaten eggs and whisk. Continue adding ladlefuls and whisking until the eggs have been brought up to temperature. Add the eggs into the béchamel and whisk to combine. Add the cheese and whisk until it’s melted. |

Add pasta to boiling, heavily salted water and cook until it’s a bit underdone. (The cooking time depends on what type of pasta you are using; check the package.) Drain pasta and add to the béchamel/cheese mixture. Add in the cooled onion mixture along with the lobster meat, chopped chives, and thyme and combine thoroughly. Adjust seasoning at this point and pour into a heavily greased, 3-quart baking dish. |

Top the macaroni pie with the bacon bread crumbs and bake for 35 minutes, until top is browned and bubbly. Let cool slightly before serving. |
