1⅔ cups whole Wheat Pastry Flour
1 tablespoon Baking Powder
⅓ cup ground Flax Seeds meal
2 tablespoons grated Coconut
½ cup Pineapple Juice
½ cup Walnut Oil
2 teaspoons Lemon Extract
½ cup Maple Syrup grade B
1 cup fresh or frozen Cherries , pitted

Preheat oven to 350°.

Combine flour, baking powder, ground flaxseed meal, and grated coconut in a large bowl and mix well.

Combine the pineapple juice, oil, lemon extract, and syrup in a medium bowl and mix until smooth.

Fold the batter into the flour mixture and blend with an electric mixer until there are no lumps.

Add the cherries and mix until evenly distributed.

Place in a greased loaf pan and bake for 30 minutes.
